How is this different from a spreadsheet?

A spreadsheet has no idea who is looking at it. An Appvise app has real accounts, real roles, and rules the server enforces, so a user only ever loads the rows they are allowed to see. It also has forms, validation, and versions you can preview and restore.

Can I move an existing process over gradually?

Yes. Most people start with one table and one screen, use it for a week, then keep asking for the next piece. Every change is a version you can restore, so trying something is cheap.
